I always cook this at BBQ or dinner to go with meat or fish
add as many of the Veg as you wish to cater for
2 Medium carrots
2 medium sweet Potatoes
3 medium white Potatoes
2 Red onions
1 bag of spinich
Balsamic Vineger
Chop all your veg up lighty drizzle Oive Oil on the veg and add salt and black pepper
place in a pre heated oven 180 and cook till you think they are ready....an hour or so.....
put the spinich in a bowl and when your veg is done place them on top of your spinich...drizzle salad with Balsamic Vineger and serve..
simple yet very tasty:D ...plus if you dont like the veg in this one use any veg you like
