What about chicken wraps, you can eliminate some of the stuff so your kids will eat them i usually make vego ones and the kids love it!
Basically i cook up broccoli, cauli, onion, mushrooms, capsicum then have some lettuce, beetroot, tomato, etc and cheese and put it all on the table ith some tzakai dip (sp?) and sour cream everyone has a pita bread wrap and just helps themselves,(naturally my younger ones tell me what they want)
Its so yummy and i find the kids will eat everything as they can choose it :) they love it!

What about French Onion Chicken.
All you do is use Chicken Breasts and a packet of French onion soup mix. I normally get the homebrand ones for 33 cents. Place Chicken in a freezer bag and also the French Onion Soup mix and shake well to coat. I like to leave in fridge for an hour to make sure coating will stay on.
I then cook slowly on low heat in an electric fry pan with lid on for 25-35 mins.
DH loves this!!!!

We love our chicken too!
Here's a really easy one - it's two dishes using the one recipe
1kg chicken wings or chicken drumsticks (make sure wings have the tips cut off)
1 large onion, chopped
1 large tin of crushed tomatoes or 1 bottle of passata
500g pasta (any sort)
fry up the onion in a little oil until it's light brown and caramelised
add the chicken and fry until golden brown
pour in the tomatoes or passata (you can add a bit of red wine if you prefer)
flavour with a bit of salt
bring to the boil and turn down the heat to simmer for around 25 - 30 mins stirring occasionally until the sauce has reduced
cook the pasta and drain
take out the chicken pieces and serve as seconds and use the sauce on the pasta
variation: you can put frozen peas or fresh peas in just before you put the sauce
This would probably serve four as it feeds me, DS and DH and leaves enough for us to take to work the next day
Toooo easy!!

Chicken schnitzel making your own crumb mixture using bread or corn crumbs, smashed up potato chips and finely grated parmesan. Coat lightly in flour, dip in a mixture of egg and milk and then press into crumb mixture. Put in fridge for about 30 mins, (even 15 mins would do though), and cook in a moderate oven until golden.
Easy and YUM!
I also have a chicken teriyaki recipe if you want it.

How about Mushroom Sundried Tomato Risotto with chicken?
I had this at a restaurant once and it tasted fantastic so I googled it and wadda ya know the recipe exists!! By the way recipe doesnt say to add chicken but I did!! Turns out perfect every time. Yummmmy! Ps use boiled stock not cool stock!
You need:
- 1 onion, diced
- 3 cloves garlic, chopped
- 2 chicken breasts, diced
- 300g arborio rice
- 50ml olive oil
- 200g mixed mushrooms, roughly chopped
- 100g semi dried tomatoes, roughly chopped
- 300ml cream
- 800ml chicken or vegetable stock
- 2 tablespoons fresh basil, chopped
- Salt & pepper
- Shaved parmesan, to serve
Method:
· Heat the oil in a saucepan, fry the onions and garlic without colouring them. Brown chicken pieces in seperate fry pan.
· Add the rice and fry for 30 seconds, stirring continuously.
· Add the stock a little at a time and stir into the rice. When the liquid has been absorbed, add more stock and repeat until all has been used. Stir continuously to avoid sticking and burning. (That's right - add in lots of that home-made elbow grease.)
· Add the chicken pieces. Add the tomatoes and mushrooms and stir through.
· Season with salt and pepper.
· Add cream and chopped basil and continue to cook until rice is tender.
· Serve, topped with shaved parmesan.
Just like what you would get at a restaurant if not better!!
Note - When cooked the rice should still be slightly hard when you bite it – not mushy. If u luv chicken just add another breast in the recipe.

Thanks for this recipe! I have a pack of French onion soup that I was going to use to make a dip but didn't need to in the end so will try the chicken instead.
