in a bid to make our meals more interesting, i bought some beetroots at the markets.

Now im not sure how to cook them.

Anyone got some tasty ideas?

Beetroot and Cottage Cheese Finger sandwiches... YUM

And also of course a yummy salad



Roasted Beetroot, Spinach and Sweet Potato Salad

Ingredients

3 beetroot, unpeeled, cut into wedges
1 sweet potato, unpeeled, cut into wedges
20g Australian Butter, melted
3 teaspoons brown sugar
1 cup Australian Low Fat Yogurt
1/4 cup orange juice
2 teaspoons finely grated orange rind
1 clove garlic, crushed
500g baby spinach leaves
100g green beans, blanched
2 tablespoons chopped pistachio nuts, toasted
pepper, to taste
Method

Place vegetables in baking dish, drizzle over the butter and sprinkle with sugar.

Bake at 200°C for 45 minutes, turning occasionally.

Combine yogurt, juice, rind and garlic.

Arrange the spinach, beans and roasted vegetables on serving plates.

Drizzle over the dressing and sprinkle with pistachio nuts and pepper.

I got this off the net a while ago its quiet yummy :)

Beetroot salad
Serving size: Serves 8
Cooking time: Less than 60 minutes

INGREDIENTS
2 medium (320g) trimmed beetroot
¼ teaspoon ground sweet paprika
¼ teaspoon ground cinnamon
¼ teaspoon caster sugar
1 teaspoon orange flower water, optional
1 teaspoon lemon juice
¼ teaspoon salt

NOTE: This recipe can be prepared a day ahead.

METHOD

Place the beetroot in a small pan, add enough water to cover. Bring to the boil then simmer, covered, for 25 minutes or until beetroot is tender. Drain, reserving 1 tablespoon of the cooking liquid. Cool then peel away the skin.

Cut the beetroot into small wedges. Combine the beetroot, reserved cooking liquid and remaining ingredients in a medium bowl; mix gently.

Not suitable to freeze. Beetroot suitable to microwave.

Or just roast them with some sea salt and olive oil:chef: Yummy!!!

i love mixing them in a salad with kidney beans, red onion, fetta, diced capsicum, even some boiled potato pieces also etc (plus dressing of salt, olive oil and white wine vinegar to taste! or even just some french dressing!)

I love beetroot full stop LOL everyday i eat a beetroot cucumber and mayo sandwich sad huh? this babies going to be purple when it comes out LOL

Roast them (don't peel. Cut off stalks and place in foil parcels, drizzle with olive oil.) until soft. When cool peel and coarsely chop. Mix with rocket leaves, fetta cheese and walnuts. Make a dressing with walnut oil, red wine vinegar, garlic salt and pepper. Toss together.
