Well I make really yummy ones but it's kinda cheating!!
To make them, I just get some puff pastry (cut each sheet in half), spread a bit of seeded mustard on each sheet (you don't have to but it's yummy!), then just roll up a sausage in each half sheet, seal the ends, brush with egg, and stick in the oven - voila :wizard:
This is my recipe - and they are scrummy!
To make approx 40 party size:
500gm sausage mince
500gm beef mince
2 pkts chicken noodle soup mix (homebrand/no name are fine :) )
onion flakes
sprinkle granulated garlic
5-6 sheets of ready-made puff pastry
2 lg or 3 sm eggs (leave one aside of either size for an egg wash for glazing the pastry
In a large bowl, mix the minces, soup mixes, onion flakes, garlic and egg(s) until well combined.
Lay out pastry sheets, and cut them in half longways. Place mince down the middle of each half of the pastry. Roll one side of the pastry over the mince mixture, then put some egg wash on the edge of the pastry, and fold the other side to make the roll. Cut into 4 equal pieces. Repeat until you run out of mince mixture! Glaze the top of the sausage rolls with the egg wash before cooking.
Cook on lightly oiled oven trays (I find that cooking spray is great for this) in a moderate oven (I set mine at about 160-180, fan forced) for 20-25 mins, or until the pastry is golden brown.
You could also par-cook them for around 10-15 mins, and then freeze them, and then cook them for a further 10-15 mins before serving.
Sausage meat, a finely chopped onion, a grated zuchinni and grated carrot, salt, pepper and pastry.

I use chicken sausages - cut puff pastry sheet in half, load each half with 1.5 sausages then sprinkle herbs on the sausage. brush edges with egg. Roll bush tops with egg, sprinkle with sesame seeds.

Thanks girls .. now I'll have to get baking and testing in the kitchen! x :)
the one i use master 4 and miss 2 loves them i call them sneaky sausage rolls :
Sneaky Sausage Rolls.
9mths and up
Ingredients:
2 Sheets of frozen Puff Pastry (cut in half)
500g sausage meat or mince meat
1 small zucchini, grated
1 small carrot, grated
¼ of pumpkin grated
1 cup bread crumbs, fresh or from a packet
1egg
1 tablespoon tomato paste
1 tablespoon milk
Method:
Preheat the oven to 200 degrees Celsius
Line two baking trays with non-stick baking paper. Place the pastry on a board to thaw. Combine the mince, zucchini, carrot, breadcrumbs, eggs and tomato paste in a bowl and mix well. Cut each sheet of pastry in half. Divide the sausage mix into four. Form it into sausage shapes as long as the pastry. Lay each sausage down in the middle of the pastry and fold the pastry over it.
Using a serrated knife cut each long roll in to five or six smaller ones. Place on the baking trays, seam side down. Brush with milk and bake for 20 to 25 minutes or until golden brown. Remove from the oven and cool. Serve with tomato sauce.
Freezable either before or after cooking
I use puff pastry too.. I cut mine into three strips - cause I make the mini...
Anyway mix is;
sausage mince
diced onion
mixed herbs
egg or two depending on how much you are making
1/4 to 1/2 cup breadcrumbs
YUMMO!

ohhhhh i love susage rolls thanks for starting this thread:thumbsup: hehe im going to try some of these recipe's too....
just a question?? do u have to cook the mince before u put it in the pastry and into the oven??? lol:confused:
Nope.. just mix all ingredients together, roll up in the puff pastry, brush with a little egg or milk and cook on about 180 for about 15 minutes or until all puffed up and nicely browned!
(Thats the cooking time for the min ones I use anyway, but just keep an eye on them and pull out when they look ready)
I always make a heap and freeze them (before cooking in a sealed container or wrapped in gladwrap) They are so easy to just pull out of the freezer and chuck in the overn, they dont take long to thaw either, or you can defrost in micro..
Ohhhh we ate the last of ours the other day, so now i am craving sausage rolls and there are none!!
