View Full Version : One Dish Dinners???
Yep... Looking for one dish meals!
I recently got a recipe for a chicken Divan (SP???) that is vegies, then diced chicken not cooked and then a sauce all in a baking dish cooked in the oven and then served with mash potato or rice etc...
and It has got me all curious for more meals that are all made in one dish like this??
I love the idea of chopping everything up, putting it in a dish and then cooking all together, especially with another bub on the way!
Does anyone have any recipes like this??

If i need a easy meal i usually chop mushrooms, broccoli beans cauli peas and corn up then slice really fine potato and pumpkin, throw in whatever other vegies i have and put them in a baking dish with a little white sauce to semi cover them (make my own flour milk and a little cheese) then i bake it till vegies are soft, about an hour usually its so easy and a great throw job too LOL breadcrumbs on top is nice too :)

I LOVE taking crappy cuts of meat and cooking them for a long time to make them yummy and tender.
My fave one pot meal is just a throw together casserole - the trick is to make it the night before and let it sit in the casserole dish in the sauces overnight, then cook it slowly for 2-3 hours on maybe 150 degrees.
Put in meat, vegies, tomato sauce, worstechire (?sp), soy, bbq - whatever sauces you think really - a packet of beef soup mix (or french onion), some water, put the lid on, in the oven and forget about it til the next afternoon!!
You can get alot of those maggi and continental meal bases that are cook in the pot. It's SO easy!! One pot and one saucepan for your mash or rice - so easy to clean up!!

Yep these are our favourites through winter !
So yummy & warming !
So much easier to throw everything in a dish which gets thrown in the oven & you come back 2hrs or so later to a yummy easy meal !

Curried sausages is a good one..
Just chuck the sausages, onion, sliced carrot, and the recipe mix + water in a casserole dish and chuck it in the oven..
You can add more veges if you want and serve it with mash or rice.. Or i have also chucked half potatoes in the casserole dish before and served the sausages with them.. :thumbsup: Means no extra pot for the side..
Pretty sure you can do apricot chicken the same way just chucking in all in a dish and in the oven..
Risotto isnt a quick "chuck it in and leave it" thing but it is one pot and very yummy..

Chicken and Vegetable Pilaf
Ingredients:
1 Tablespooon of yellow curry paste
3 cups of basmati rice
1 tablespoon oil
Assortment (around 2 cups) of veges chopped up small (I like to use zucchini, sugar-snap peas, carrot, baby spinach, capsicum and potato)
1 onion
4 cups of chicken stock
2 chicken breasts cut up into medium chunks
bunch of mint leaves
Plain biotic yoghurt to garnish
Method:
Cook onion in oil til transluscent.
Brown chicken and remove, place on plate and drain with paper towel.
Add rice and add curry paste to cooked onion, cook on a medium heat for 2-3 minutes to allow flavours of paste to cover rice and onion.
Place chicken and vegetables on top of rice, add all the stock, bring to the boil and simmer for 20 minutes on a medium heat, covered.
Once all the stock has been absorbed it's ready! Top with a bit of yogurt and enjoy. I also like to sprinkle some mint leaves on top for an added bit of flavour.
I love this dish.. I make it every week or so. It's so easy and sooo yummy. Enjoy! :thumbsup:
I use the Maggi and Masterfood packets, they have great and varied flavours using all cuts of meat.

Goose - I am a huge Risotto Fan and we have it often, I have just discovered from my mum that you can make them in a rice cooker! This makes it a really easy 'chuck it all in and wait' dish, I cant wait to try making it like that, but have to find the inside of my rice cooker first!
PunkBaby - That vegie bake sounds yummo.
MissBehave - Yum have never made a pilaf will have to give it a go!
I will have to check out the masterfood and maggi packet mix things, never used them much but I just love the idea of chucking everything in a baking dish and coming back to pull it out of the oven in an hour or two - No standing over the stove all arvo/night!

Chow mein maggi/continental mix!
Brown mince in a wok/frypan, throw in chopped carrot, cabbage, rice, recipe mix and water. Cover, and let it simmer for 30 mins, VOILA! Yummo :yes:

I had an awesome Chicken stew type dish at a friends house for dinner on the weekedn, it was really slow cooked and served on mash potato.. honestly it was one of my fave meals i think!
I am going to get the recipe off her so will share it when I do...

Dont know if you girls are aware of this but the "Master Foods" website has a section called "In My Pantry" and all you need to do is put in the ingredients you have in your pantry & it will give you a recipe for something yummy for dinner! YAY!

OH It was soo good! served with a creamy mash potato, I will have to share the recipe, was so easy, chuck it all in the pot and let it cook for an hour and a half.. couldn't have been nicer! When I get a chance I will post it..
