I cannot cook.. I know people say that and really can, but I can't.. I'm so bad that we pay someone to cook most of our dinners.
With that in mind I made this tea cake the other day and it was delicious. Soooo easy and quick to make.. and it's delicious (did I say that already?) get your mice/ mouses/meece set to print....
Lemon Tea Cake
BASE
1 cup SR flour
1 cup castor sugar
60g butter, chopped
1 egg, lightly beaten
FILLING
1/4 cup lemon jiuce
1/2 cup sugar
1 egg, lightly beaten
60g butter, chopped
Preheat oven 180 deg cel
18cm cake tin, lined with baking paper
sift flour, add sugar, rub in butter until resembles breadcrumbs
Stir in egg to form a soft dough.
Press 2/3 of dough over base of pan
Combine all filling ingredients in small pan
Stir over low heat until mixture thickens
Spread hot filling over base, 1cm from edge
Crumble remaining dough over lemon filling
Bake 30 mins or until golden brown
Cool in pan.
It light and fluffy and is a great morning tea or light dessert cake. Can be eaten alone or with icecream (yum) and keep well for days.
