View Full Version : I WANT a chewy biscuit recipe :)
sooo often I make biscuits (well.... actually ... who am I kidding... :D I'm just starting to cook occasionally!!) - and I love making biscuits... but they are always hard or soft biscuits (e.g. jam drops or rock cakes) - I want something chewy!!!!!
not museli slice... A BISCUIT!!!!
are there any bubhubbers who have a recipe to share??? I am desperate to expand my talent!!! :D

Chewy chocolate cookie recipe
INGREDIENTS:
1 1/4 cups margarine, softened
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/8 teaspoon salt
1 cup chopped walnuts

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together margarine and sugar until smooth. Beat in eggs one at a time, then stir in the vanilla. Combine flour, cocoa, baking soda, and salt; stir into the creamed mixture until just blended. Mix in walnuts. Drop by spoonfuls onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Cool for a couple of minutes on the cookie sheet before transferring to wire racks to cool completely.
These are super nice sort of chewy but with a really unique taste,the ginger doesn't overpower. You can bake them with sprinkles on top for the kids or those silver balls. For xmas we used xmas cutters and when cooled added white icing to the tops of the cookies with the silver balls and they looked great. Best of all they are very easy to make.
Ginger and Molasses Cookies
3/4 cup soft margarine
1 cup brown sugar (packed)
1 egg
1/4 cup molasses
2 1/4 cups plain flour (if using self-rising flour, omit salt
and reduce soda to 1 tsp.)
2 tsp baking soda
1/4 tsp salt
1/2 tsp nutmeg
1/2 tsp vanilla essence
1 tsp ground cinnamon
1 tsp ground ginger
Mix margarine, brown sugar, egg, and molasses thoroughly. Sift flour.
Blend all dry ingredients; stir into molasses mixture.
Heat oven to 180. Roll dough in 1 1/4 inch balls. Sprinkle
Each with 2 or 3 drops of water. Bake 10 to 12 minutes, or just until set but
not hard. Makes 4 dozen
*If anyone wants to make these you find the mollases in the health food part of the supermarket not near the sugar. I spent ages trying to find the stuff first time very frustrating:p

OMG I didn't realise how old that first post was! :laughing:. I just googled chewy biscuits and it pointed me to this thread.
OK - I've just pulled my first batch of the chocolate one's out of the oven and let me tell you they taste terrific. I used chocolate chips and almond slivers coz thats what I had available. They are sooooo yum they should be illegal. Time to put my fat pants on. I haven't tried them on as a face-pack though so can't tell you about the beauty aspects of these cookies.

Old thread, I know, but I just made these ones because Mum_I'm_Hungry was making me envious of her batch :p
250g unsalted butter, soft
1.5 packed cups brown sugar
3 eggs
1tsp vanilla extract
1.5 cups plain wholemeal flour
1tsp baking powder
1tsp cinnamon
1.5 cups raisins
3 cups rolled oats
cream the butter and sugar, then add one egg at a time and beat in before adding the next. Add the vanilla extract. Sift the flour and baking powder and cinnamon in and mix. Mix in the raisins and oats. Drop teaspoon-full sized bits onto tray (I use baking paper) and bake for about 12 mins at 180C.
This is a big batch. Dough can be frozen.

150 grams butter, softened
1 cup brown sugar
1 teaspoon vanilla essence
1 egg
1 1/2 cups plain flour
1/2 teaspoon baking powder
50 grams white chocolate cut into chunks
200 grams dark chocolate cut into chunks
Prehead oven to 180 degrees.
Beat butter, sugar and vanilla until light and creamy
Beat in egg
Stir in sifted flour and baking powder and fold through teh white and dark chocolate chunks.
Spoon heaped tablespoons onto a non stick baking tray, leaving room for spreading.
Flatten slightly and bake for 10-15 minutes or until browning around the edges.
Cool for 2 minutes before transferring to a wire rack.
Makes 12 large cookies!
