I have a whole heap of strawberries that need to used quickly, before they go off.
I thought I would do a dessert with them tonight, I was thinking pancakes with strawberries and strawberry sauce.
Does anyone know how to make the sauce? Someone told me once to blend them with icing sugar, does this sound right? Or, what else could I make?

I cut up the strawberries and put a couple of tbl spoons of brown sugar over them. It draws out the moisture and makes a nice caramel/strawberry sauce - I just put it over pancakes, yogurt or icecream.
Not sure how to make the sauce sorry.. but i had the same situation last week and ended up making some mini pavalovas with cream and heaps of strawberries on top... we always chop up the strawberries and toss them through some icing sugar and let sit for a minute before serving them, makes them extra sweet and yummy!

Yep thats right.. :thumbsup: Its a couli..
You can either blend strawberrys and a touch of icing sugar (might need to add a few drops of water depending on juiciness and consistancy) and its your choice whether you strain the seeds out or not..
This can be served warmed up or cold..
Or chop the strawberrys up put them in a pot with a touch of sugar (normal is fine) and cook them on a low heat (may need a few drops of water but shouldnt) till soft then blend..
This was can be strained or not and served hot or cold also..
Just depends if you want more of a fresh,tangy kinda sauce or a cooked,stewed kinda sauce..

I luv strawberries in home made muffins YUM!! You can use up heaps for those. Or use them to decorate cup cakes with cream. MMMM. Go well with scones too.
