I need a great Vegetarian Lasagne recipe
Anyone got one they just lurve :p
I have eggplant, zuchinni, pumpkin, sweet potato and mushrooms

i love making my vege lasagne using the Paul Newmans Sockarooni pasta sauce (jar) and make layers with the veges (which i pre-cook slightly), smooth ricotta (which you buy in a tub in fridge section), mozzarella and the pasta sauce. then finish top layer with white bechamel sauce or even just sauce & mozzarella if u prefer.
i cover with foil for 3/4 of cooking time and then take off to brown top.

I got an awesome one out of a "Cookery the Australian Way" a few years ago:
Ingredients:
125g instant lasagne sheets (the latina fresh ones work well)
2 teaspoons oil
1 chopped onion
1 crushed clove of garlic
200g sliced mushrooms
1 can crushed tomatos
1 grated zucchini
1 tbs tomato paste
1 grated carrot
salt and pepper to taste
1/2 teaspoon basil
1/2 cup grated cheese
1 quantity of cheese sauce
Cheese sauce:
Ingredients:
1 tablespoon butter
1.5 tbs plain flour
1 cup of milk
2 tbs grated tasty cheese
1/4 teaspoon mixed mustard
salt + pepper to taste
Method:
Melt butter in small saucepan and remove from heat. Add flour, stir with a wooden spoon to make a thick paste.
Cook on low heat for 30 seconds, stirring continuously. When mixture is bubbly and white, remove from heat.
Add milk slowly and stir until smooth (I always use a whisk - I find it better than a spoon).
Return to the heat and stir until boiling. Add cheese and mustard. Reduce heat and stir for one minute.
Lasagna Method:
Heat oil, sautee onion and garlic
add mushrooms, tomoatoes, zucchini, tomato paste, carrot, salt + pepper, and basil
Stir over a low heat for 20 minutes until sauce thickens
Place a single layer of pasta sheets in the bottom of a dish. Cover with a layer of vegetable sauce, then a layer of cheese sauce. Repeat layers, finishing with cheese sauce. Sprinkle cheese over top
Bake at 180 degrees for 30 - 40 minutes

i usually just use random vegies lay them down then put my pastry sheets, white/cheese sauce, then continue till its all gone :D dont have a recipe but i have to say that celery makes it really yummy even just a tiny bit!
