OHh i made the best baclava slice today Hmm its heaven!! I did get the nut mix though from coles to cheat but the rest i did mysef LOL

Yummy vanilla slice to make this is really easy if you like vaniila slices

Get some of those sao bisquits the square ones lay in a lined and greased pan. get a pack of fosters clark custard mix, make according to directions then mix in a small bottle of cream (200 or 250ml you know the small ones) whisk it really well then pour over the top of the bisquit base. Sit in the fridge for a few hours till set then ice with standard icing Too easy and its only one pot!!

I'd be interested in lemon slice if anyone has the recipe - my Mimi (grandmother) used to make it before she passed away and I would love to make it for the boys...oh, who am I kidding...for me! :p

i made this one the other day, just googled it turned out quiet yummy

INGREDIENTS
1 x 250g packet morning coffee biscuits
LEMON COCONUT FILLING
125g Copha, chopped
1 x 400g sweetened condensed milk
1 1/2 cups desiccated coconut
1/4 cup lemon juice
1 tablespoon grated lemon rind
Extra desiccated coconut

LEMON ICING
20g Copha
1 1/2 cups sifted icing sugar
1/2 teaspoon lemon juice
1/2 teaspoon vanilla essence
4-5 tablespoons hot water

Line the base of a 19 x 29 cm shallow cake tin with baking paper and a layer of biscuits, cutting to fit if necessary.

MELT Place Copha in a saucepan or microwavable bowl and melt over a low heat or on defrost (30%) in the microwave.

MIX Place condensed milk, coconut, lemon juice and lemon rind in a bowl. Add melted Copha and mix to combine.

SET Spread mixture over biscuit base and cover with another layer of biscuits. Spread with icing and sprinkle with extra coconut. Set at room temperature. Cut into squares and store in an airtight container in the refrigerator.

FOR THE ICING: Place Copha in a saucepan or microwavable bowl and melt over a low heat or on defrost (30%) in the microwave. Place icing sugar, lemon juice and vanilla essence in a bowl. Add melted Copha and mix to combine. Beat in sufficient hot water to make a smooth paste.

I make a vanilla slice similar but I get 2 sheets of frozen puff pastry, place them on lined trays, ***** all over with a fork and bake on 200 for 10 - 15 minutes or until risen golden and crisp. Put on wire rack to cool.

Blend 1/2 cup custard powder 1/2 cup castor sugar and 2 bups cream in a saucepan and grasually stir in milk over a medium heat until custard boils and thickens. I put plastic wrap on the surface of the custard to stop it from forming a skin and leave to cool completely.

Then put the custard between the 2 cooked sheets of puff pastry and ice with passionfruit icing ( 1/4 cup passionfruit pulp, 25 gms butter and 1 1/2 cups icing sugar)

SOoo yummy and just like the bakeries!

Yum sounds nice :D the only good thing about foster clark is you dont need to cook it so you dont get the skin :D

Really! I'll have to get some and try it.. I guess you could just use it in this recipe then instead of cooking the custard hey? Would make it a lot quicker to make too.. Thanks!

Yep its the best :D they have chocolate too its in like a bag style pack you mix it with milk, i just put the cream in as well to thicken it and make it no so sweet :D

mars bar slice:

3 king size mars bars
90g butter
3 cups of rice bubbles
200g melted chocolate (cooking or normal eating chocolate)

grease and line slice tin with baking paper
melt mars bars with butter and mix with rice bubbles
pour mixture into tin.
melt chocolate and pour over slice
let slice set in a cool place or the fridge
remove slice from tin and cut into pieces.


no bake choc peppermint slice:

375g packet dark choc melts
395g can sweetened condensed milk
50g butter, chopped
peppermint essence
4 x 55g peppermint crisps, chopped
1/2 cup white choc melts, melted

grease an 18cm x 28cm rectangle slice pan. line base and side with baking paper, extending paper 4cm above edges of pan.
combine dark choc melts, condensed milk, butter and a few drops of peppermint essence in a pan. stir over a low heat until smooth. remove from heat. stir in half of the peppermint crisps. pour into prepared pan and smooth top with spatula. refrigerate for 10mins, then sprinkle remaining peppermint crisps over top. refrigerate overnight or until firm.
remove slice from pan and place on a chopping board cut into small squares.
pour white choc melts into a medium snap lock bag. squeeze into one corner then twist bag and snip the tip, pipe chocolate in a zig-zag pattern over peppermint squares.
refrigerate for 10mins or until chocolate is set..

mmmmm mars bar slice, I make it all the time! Only one things bad about making it, I can't stop eating it.
