Thought I'd start a thread for super Quick recipes.

I work on mondays tuesdays and wednesdays and after picking ds up from daycare he is tired and hungry and it is a race against the clock to get him fed, bathed and bed.

I'm sure many of you face the same problem so I thought this thread might be helpful for others other than just me.

So what quick and easy dinners do you prepare? Please share your suggestions and recipes!

Usually if we have a quick meal i make pasta or just three meat and veg or something. Another thing i do for making a yummy fried rice is i cut everything up the night before and put it in containers then i boil the rice and store it in fridge too over night then when i get home all i have to do is cook the vegies, bacon etc throw the rice in and its done in about 15 minutes!

The quick meal my boys love is a vege pasta bake.
while the pasta is boiling (i use rice pasta it cooks quicker and doesn't make me bloated) in a fry pan i soften some veges like zucchini peppers, onion, mushrooms, carrots, watever ur kids like. put aside. cook some mince then add all together in a dish sprinkle with tasty chesse and bake for 20 min. :chef:

I have heaps of quickies but my DS loves this one....

Baked Bean Mini-Pies

Just cut some frozen puff pastry sheets into quaters and line a greased muffin tray with them. Add baked beans (or anything really) and sprinkle with cheese on top. Bake in oven until nice and brown and cheese is all melted. YUMMY!

It is kinda like a variation of beans on toast, just makes a change.

I find if I have a packet of frozen pastry in freezer we never go without a yummy meal.

Scrambled eggs with toast, cheese, and steamed vegetables... 15 minutes maximum.

Deli roast chicken, boiled or mashed potatoes, vegetables. 20 min. Tip: fill the kettle and boil the water there while prepping the potatoes. It boils faster than in the pot.
