Hi Everyone,

I had to pass this on. This is a friend of a friend's recipe. Tonight I had complete silence at the dinner table:eek: They loved it....

Ingredients:
2 Lamb Shanks
1 packet soup mix (soaked overnight & drained)
2 large potatoes
2-3 carrots
1 turnip
1/4 Kent pumpkin
1 large onion

Cut all vegies into pieces
Brown shanks in a little oil and place in slow cooker or large pot.
Place in vegies & soup mix and cover with vegetable stock.
Cook on high until shanks falling apart. (I put it on at about 10:30 and served it at about 5:30)

Serve.....

Yummo

It is very hearty and we have so much left over. It fed the 4 of us = 2 adults a 1yo and a 3yo. We all have good appetites.
