Chicken Stock with half stock half milk works well! (sour cream great too!) Evaporated milk is just as good. (Mmmmmm, scalloped Potatoes!!)
I always use milk when I do a potato bake :)

I've never made scalloped potatoes without cream, but the suggestion of milk by cwsmum would work the same as using cream.
I have a great tip for those who make scallop potatoes. Add slices of pumpkin and whether you use cream or milk stir in a packet of cheap home brand french onion soup and whisk it in to the cream or milk. The french onion soup mixes are kept in the isle where the Continental and Maggi packets are. You will be blown away because it adds lots of flavour
ohhhhhhhhhhhhhhh yum!!!! got a recipie mmmmmmmmm i would love it!!! (i am always thinking of my belly lol) can you make it for two??
Thanks girls  i have a packet of onion soup mix will try that!!

I also add french onion soup mix to apricot chicken. Just whisk it into the nectar before pouring it over the chicken. It makes so much difference
Let us know if it was a hit with the family or not. :)
saremc - There's not really a set recipe for scallop potatoes. Just peal and thinly slice potatoes (and pumpkin if you like), neatly lay them in a baking dish, get a bottle of cream or milk if you like, whisk in french onion soup, pour over the pototoes so that the cream or milk covers them and then put it in the oven on 180-200 until the potatoes are soft. You can check that by poking in a sharp knife.
MMM mmm MMM now I'm hungry.
