Season them with Cajun seasoning, Chilli Seasoning, Chicken Salt or whatever you like. Pan fry them and eat them with a salad or cut them into strips and make a chicken caesar salad. That's what I do!
You could dice them up and cook them with some onion, garlic and maybe pesto if you have it.. Add some cream or light and creamy evaporated milk and toss through pasta .. one of my fave easy dinners.. I add mushies and sometimes capsicum or sun dried tomatoes..
You can add pretty much whatever vegies you like.
Or dice them and coat them in a mix of honey soy and garlic and cook in a pan.. serve with some boiled rice YUM!
I would cook them then top with tomato supreme and cheese and pop under the grill :chef:

We love Chicken fillets here !!
May be too late already, but one thing you could do is mix in a bowl equal parts of sweet chilli sauce and soy suace and marinate the fillets in there for an hour or so (cut up into strips or cubes). Then pan fry them in oil - keep the marinade. Once cooked take the chicken out and stir fry some veges. Once cooked, throw the chicken back in with the rest of the sauce and serve with rice or noodles.
Another thing you could do is to pan fry them in some oil (cut them up a bit first, but not too much) then pour over a tin of tomatoes, some salt and pepper and some olive oil. Cook for about 20-30 minutes and serve with mashed potatoe.
Another thing we do here is to crumb them (flour, egg and crumbs - BTW, in the breadcrumbs I put in some parmesan cheese, basil and oregano and salt). Pan fry until golden, and then pop them in a tray lined with baking paper and put in oven to finish them off, perhaps about30-45 minutes. Bake them SLOWLY !! They come out beautiful and tender and juicy done like this.
Good Luck !
