Bugger! I am so dumb... I didn't even realise there was a recipe thread.. I just saw it now... Will someone move me to the right place?



EASY ONE POT CHICKEN

50g leeks, washed and finely sliced
15g unsalted butter
110g chicken breast, diced
1 medium carrot, peeled and sliced
275g sweet potato, peeled and chopped
300ml chicken stock (she makes the stock fresh, I just used water and it tasted fine)

Sautee the leeks in the butter until softened. Add the chicken to the pan and saute for 4 mins. Add vegies and stock, bring to the boil and simmer, covered for about 30 mins. Puree.

for babies 6-7 months
suitable for freezing

I just made this one for the dude and he loved it... Tee hee so did DP!

I did post this one once before but having just made it tonight I just happen to have it to hand.....an oldie but a goodie - shepherd's pie! Good for the whole family - and it freezes!

1 tablespoon vegetable oil
1 onion, peeled and chopped
500 g finely minced lean beef
1/2 cup grated cabbage
1/2 cup grated carrot
1 zucchini finely chopped
2 tablespoons plain flour
1 cup of beef stock or water
2 tablespoons chopped fresh parsley
4 potatoes peeled
1/4 cup milk
15 g butter
1/2 cup grated cheese
1/4 cup dry breadcrumbs

Preheat oven to 180 C
Heat the oil in a large frying pan and saute onion gently until it is soft and translucent. Add the beef, breaking it up and cook over a medium-high heat until brown and crumbled. Add cabbage, carrot and zucchini to beef and stir for about 5 minutes. Stir in the flour and cook, stirring for 1 minute. Add the water/stock and parsley and bring to the boil. Simmer, stirring, for about 5 minutes until mixture thickens, then cover and simmer gently for about 30 minutes.
Boil, drain and mash potato until smooth then add milk and butter. Spoon beef mixture into deep pie dish, layer the mashed potato over the top, mix together the cheese and breadcrumbs and sprinkle over the potato, then bake in the oven for 15 - 20 minutes or until golden.
For a baby - puree, mouli or mash.

For adults a dash of tabasco sauce adds a kick (and a glass of red accompanies it well!) You can freeze this dish or servings of it. You can also hide many other vegies in it - including broccoli and parsnip which were tonight's additions!
