I made these the other night and found that my toddler loved them, they have a texture that little ones love and you can chop them up and they can eat them with their fingers. They are basically savoury pancakes and you could use all different combinations with the basic recipe(self raising flour, eggs and milk)
Ingredients
1/4 cabbage tginly chopped
2 tbsp shallots, chopped
1 cup self raising flour, sifted
1x310g creamed corn
2 eggs lightly beaten
1/2 cup milk(you could use reduced fat if cooking for yourself and want a low fat version)
canola or olive oil spray
Method
*Mix cabbage, shallots, flour, creamed corn, eggs and milk in large bowl.
Let stand for 10 mins
*Spray non stick pan with oil and place over medium heat. Place tbsp of mixture in heated frypan. Fry until golden on both sides.
*You can serve these with cream cheese and sprinkled with chopped chives if you like :)
EASY FISH CAKES
These fish cakes are great because they are bland enough for little ones (and again can be eaten with fingers) and adults can jazz theirs up with some sweet chilli sauce and salt
Ingredients
*1 tbsp olive oil
*300-500g boneless white fillets, like flathead or bream
*1 egg, beaten(poor egg! :p )
* 1/2 cup self raising flour
* 1 small cucumber, finely chopped
* 1/2 red capsicum, chopped
* 3 spring onions, finely chopped
Method
* Process fish in food processor or chop finely
*combine with the remaining ingredients
* heat oil in frypan and cook spoonfuls of mixture until golden brown both sides :)
