:) Hi! I came to this section looking for some inspiration(always on the look out for some yummy, healthy recipes for the kids) but alas I found none! So I thought I might get the ball rolling and write down some recipes that are chock full of vegies and other good things but your kids will still love them!(well it has worked on mine anyway)these are also good for fussy DH! it would be great if some others would add some recipes that they have found have worked on their fussy eaters :)
COLOURFUL VEGIE FRITTATA
Ingredients
1 cup broccoli florets
3/4 cup sliced mushrooms
1 onion chopped
1 zucchini, sliced
1 cup pumpkin, diced and roasted
1 tbsp butter
1 cup bacon, diced
8 eggs
1/4 cup dijon mustard
1/2 tsp garlic salt or 2 cloves finely chopped
1 1/2 cups shredded cheddar cheese(but i use jarlesburg,yum!)
1/2 cup chopped tomatoes
salt and pepper to taste
method
*In a skillet saute broccoli, mushrooms, zucchini, bacon, onions in butter until tender.
*Add roast pumpkin, cheese and tomatoes to broccoli mixture and place in a 25cm round quiche dish.
*In a mixing bowl beat egs, water, mustard, herbs and garlic until foamy
*Add about 1 tsp salt and a couple of pinches of pepper. Pour ober the vegetables.
*Bake at 190c for 25-30 mins
*It is cooked when a knife inserted into the centre comes out clean.
This recipe works particulary well with older kids and is delicious!
The recipe i had for it says that it feeds 6 but in my house it only feeds 3-4!
