I have some chicken thighs I have removed from the freezer that I didn't even know were there! I have no idea what to do with them, there is 1.1kilos worth!
Any suggestions would be appreciated!!:)

Put them with some chicken stock, garlic, oregano, and lots of lemon juice and bake them with potatoes.

I love chicken thighs in a green curry, or I'll do a hotpot type thing with garlic, rosemary, red wine and black pepper, then serve it with mashed sweet spud

Sounds nice but I am thick when It comes to cooking.
So I am putting all that mixture into a baking dish...potatos as well? How many lemons...like 2 squeezed?

I fished out my recipe for you
juice of 2 lemons, 1/2 cup of stock, 4 cloves of garlic, 2 teaspoons of oregano.
(that's for 1kg of chicken thighs)
you just throw the lot into a baking dish with the potatoes (I just half them) and then spray with spray oil.
45 minutes at 200 celcius

Ok I went to the shop and they only had fresh parsley can I use that? Or should I just use the dried Oregano that DH can grab on the way home?
Will I chop up the thighs or leave as is?
Sorry to be a pain but it sounds YUM and I want to do it right!

hehe no worries... do what you like!! I like dried oregano personally, but I'm sure fresh parsley will be yummy too

The chicken hasn't defrosted so I will be doing them tomorrow night. I got the chicken stock with added herbs so I will just stick with that and not add anymore I think, for this time.

I use chicken thighs to make apricot chicken. Just put the thighs into a baking dish, pour over a packet of french onion soup mix, turn and coat, pour over 1 tin of apricot nectar and put in the oven for about 1 hour at 180 degrees. After the first half an hour I also add frozen veggies (usually peas, corn, carrot, capsicum) straight into the baking dish with everything else. Serve with rice. Yummy, cheap and easy!
