Meringues
2 egg whites
quarter teaspoon salt
half cup (125g) caster sugar
3 drops vanilla
Preheat oven to 110.
Add salt to egg whites and beat until very stiff. Add sugar gradually and continue to beat until very thick.
Stir in vanilla.
Pipe into shapes on oven tray (tray needs to be greased & floured, or use baking paper).
Bake at 110 for 1-1.5hrs, reducing temp during cooking. Do not allow meringues to color.
Cool on cake cooler.

Yup, meringues are the crunchy ones, the pav recipe I'm about to post gives the marshmallow centre.

You're welcome :D
I usually make the meringues, DS likes to help make funny shapes. My mum uses the meringue recipe and makes it into a pav, she is not a fan of the squishy pavs.
The recipes are from a book called 'Cookery the Australian Way'. Mum used the book when she was in high school, it's full of basic recipes. She picked up updated copies of it for my sis & I at a book sale a couple of years ago.

 I want to go make some now too...but my hand mixer is not here and It's too late to wisk it all by hand :(
I forgot to mention, with the meringues, you don't have to pipe them if you are going to make small ones, just drop teaspoons of it onto the tray.
