How is a nice way to cook chicken breast? I don't want a saucy breast (like a chicken tonight)..just a nice healthy but tasty piece of chicken to go with a garden salad....I always try to cook it by itself but it goes all dry.

Marinate in something before you cook it? I usually just use a bit of soy sauce, oyster sauce & some garlic.
What about spliting it open and stuffing it with something? Cheese & mushrooms maybe?
If I am cooking chicken breast I usually start it in the frying pan then once it is brown I finish it in the oven.
You could dice it up and make chicken kebabs/skewers.. marinate in honey, soy sauce and a little garlic and mixed herbs. Will stop it from drying out too yet not adding any extra fat, you can then grill them instead of cooking them in a pan with oil...??
Good luck, however you decide to have your chicken!

I have a recipe for a chicken schnitzel and a stuffed chicken breast. Both are pretty yummy if you want either of those.
Otherwise I would agree with marinating in soy sauce, honey and garlic. And perhaps even a little bit of sweet chilli sauce - YUM
Or some olive oil and lemon juice
Or olive oil and balsamic vinegar.
Then pan fry - chicken doesn't ned that long but sometimes a good way to prevent drying out is to brown the chicken by frying on both sides then finishing off in a moderate oven - sometimes even covering with alfoil.

cut it into strips and put it into a freezer bag with flour, salt, pepper and tandoori seasoning... and we usually deep fry it... how unhealthy is that!!

For something different i marinate breasts in good old BBQ sauce and just cook them in the health grill...they stay beautiful and moist!! Really yummy! I usually serve them with fried rice.

I cook my chicken breasts in an oven dish, submerge them in boiling water & cover with foil. Cook in the oven for about 45 mins. This will be the most tender juicy chicken breast you ever have. They do not gp dry or hard they are just really tender & juicy. You can also put a little bit of salt & peper on top of the chicken before cooking it or add a little lemon juice to the water. Trust me, this is the best way to cook a chicken breast.

I sometimes make tandoori chicken, but what I do is: Cut the chicken in to strips, put in a large mixing bowl. Get a tub of natural yoghurt & a jar of tandoori paste, mix together then poor over the chicken. Leave the chicken in the tandoori mix in the fridge over night, then cook it up the next day on the bbq. Its a nice quick dish!

With my chicken breast, i cut it in half, then put salsa, bacon and cheese on top and then put it in the oven or electric frypan.
Oven 200c for 1/2 hour- 1 hour
Electric frypan until its all cooked.
