Just thought i would share this with you, for years i have wondered how my inlaws got this yummy sauce and they finally showed me what to do :)
Prepare your leg of lamb as usual a little oil and salt, pepper etc chop and onion and 1/4 clove chopped garlic and sit in the bottom of the pan fill with about 2cms of water...then pour in about 400ml of napolitiana sauce (or whatever you prefer)
Cook as usual but make sure there is enough water in the base of the pan to prevent the sauce from drying out.
Turn your leg of lamb over for the last 30 minutes cooking time. Whilst cutting the meat allow the sauce to sit and grab some paper towel to lift the top layer of the sauce off the base of the tray (it soaks most of the oil up) pour the remaining sauce into a dish and use a barmix or blender to mix to a smooth consistency to make your gravy.
Its sooo yummy if you let the sauce sit longer you can get rid of most of the fat/oil from cooking. Left over sauce can be used the next day for pasta or lasagne etc.
