Hiya!
I thought that by writing it up in here then it would save me trying to find the time to write it everytime someone asks for it.
My mum made these for us a few days ago- and they are all gone. They are just too yummy!
My hubby thought she brought them and tried to claim them as her own- but her kitchen smelt too yummy after baking them to be brought cookies!
here it goes.....

Judy's Vanilla Biscuit (makes about 24)

[Judy recommends using an electric mixer rather than a whisk

250g butter softened (soften in microwave for a bit)
1/2 cup icing sugar
1 tablespoon Vanilla essence
1 1/2 cups Plain Flour - sifted
1/3 cup cornflour

1... Preheat oven to 180 degrees celcius. Line 2 flat baking trays with baking paper.
2..
Cream the butter, icing sugar and vanilla in a medium bowl until light and creamy. Add the flour and cornflour sifted together mix well. Use floured hands to shape the mixture into walnut size portions. Flatten with a fork.
3...
You can either bake them plain, or add choc chip bits, whatever you like into the top of the flattened bikkies.
Bake for 10-12 mins until Golden!

Goodluck, let me know how you go.
I also have her Anzac bickie recipe which is too yummy! Let me know and i will post it up if you like!

Thanks:yelclap:

Soft type. Depends on how long you leave them in the oven for to brown up. Let me know how you go. I reckon i will bake some this arvo to help warm the house a bit more!
Goodluck

Do you think it would work for jam drops? If i put a dollop of raspberry jam in a dent on top? Got a craving and i like soft biscuits over crunchy ones:detective:

I think it would work. Couldnt see why not.
I had thought of doing the icing in between two of the bikkies (so they are similar to monte carlo, kingston type of bikkies). Let me know how it goes!
Goodluck.

Hi!
I have just tried making this myself (my mum brought me around some the other day along with the recipe),
Its soooo easy and quick. I made them when the kids were in bed and it took me 15-20mins all up!
Save going up the shops to buy some biscuits- at least i know whats in them too!
Let me know how you all go!
