Hiya!
I thought that by writing it up in here then it would save me trying to find the time to write it everytime someone asks for it.
My mum made these for us a few days ago- and they are all gone. They are just too yummy!
My hubby thought she brought them and tried to claim them as her own- but her kitchen smelt too yummy after baking them to be brought cookies!
here it goes.....
Judy's Vanilla Biscuit (makes about 24)
[Judy recommends using an electric mixer rather than a whisk
250g butter softened (soften in microwave for a bit)
1/2 cup icing sugar
1 tablespoon Vanilla essence
1 1/2 cups Plain Flour - sifted
1/3 cup cornflour
1... Preheat oven to 180 degrees celcius. Line 2 flat baking trays with baking paper.

Cream the butter, icing sugar and vanilla in a medium bowl until light and creamy. Add the flour and cornflour sifted together mix well. Use floured hands to shape the mixture into walnut size portions. Flatten with a fork.

You can either bake them plain, or add choc chip bits, whatever you like into the top of the flattened bikkies.
Bake for 10-12 mins until Golden!
