:chef: Ingredients:
For Base:
Mix together
* about 1 1/2 (from memory) of cooked rice
* 30-40g melted butter
* Curry powder - to taste
For Mixture:
Fry up in a Pan:
* dob of butter & olive oil
* 4 pieces of eye bacon
* 1 small onion, diced
* 3/4 -1 cup diced pumpkin (small pieces)
* 3-4 medium mushrooms, diced
* 1/4 cup diced red capsicum (optional)
Cook until all ingredients are soft and have a nice colour & taste.
Egg Mix
Beat together:
* 5 lge egss
* 150-200mL thickened cream
Extra Ingredients needed:* Mozzarella or Tasty/Vintage cheese ( I had to use mozzerella as we ran out of vintage cheese and still tasted beautiful!)
* sliced tomato pieces (optional)
* dried parsley
TO MAKE:
Preheat oven to 180 degrees
Spray base of quiche dish with cooking/olive oil spray
Press rice mixture down on bottom and sides of dish to make the quiche base and put aside.
Pour mixture into the quiche dish and spread out across bottom (on top of rice base)
Spread a generous layer of either mozzarella or tasty cheese over mixture
Slowly pour egg mixture over till all covered
Optional - top with sliced of tomato
Sprinkle with dried parsley for colour
Cook for about 30 mins - depending on your oven. Cook till firm but not overcooked - middle of quiche may stay little soft but that is ok!Serve with mixed garden salad and ENJOY!! :thumbsup:
