Just quickly (I wanna get them going!), how do I bake whole potatoes in their jackets??
I have other vegies chopped up and ready to go into the oven for about an hour and a half.
Do I boil the spuds first? Then bake?
Do I use foil?
Butter?
What do I do?!

for the oven I usually just wash them, peirce them with a fork, and wrap in tinfoil, and then shove them in the oven, for at least a hour
I quite often do them in the microwave as well, do the same thing, just without the tinfoil, and put them in for 10mins
then i cut in half, put butter on, cheese and sour cream, yummy yummy

Probably chiming in far too late here, but the quickest & best way to get them tasting like a really good baked spud, is to microwave for approx 10 mins (obviously depends on your microwave & the number/size of potatoes you are using) (you can pr!ck them with a fork a few times before you zap them) then wrap them in foil & bake in a very hot oven for about 5-10 mins.
They come out perfect every time!!

Or you can SMASH EM!!!! Par boil them with their skin on in cold water in the microwave for about 5 mins. (Or on the stove)
Then smash them, drizzle in oil, salt, rosemary and cook them in the oven at 180 degrees until golden brown and cripsy. Yummy served straight up like that - or topped with sour cream and such.

I just throw them in a deep dish, drizzle with oil and a sprinkle of vege salt then into oven. Toss them a few times during baking. Always perfect.

my fav way of doing roast potatoes is it
1. clean skins
2. scratch surface all round with a fork
3. par boil or microwave
4. roll around quite rougly with olive oil and chicken salt
5. bake in hot oven till cooked, basting with hot pan oil at 15min intervals.
yum yum...a winner everytime

May have to give that one a go...... :chef:
So do you only cook them until they are still fairly firm?

I just wash 'em and bung them in a hot oven, just as they are.
If you're in a hurry, microwave them most of the way first, but they're better cooked entirely in the oven.
Best if they get good and dark on the outside - split them and add a dob of butter... yum!

Yeah - so they are too hard to eat, soft enough to 'smash' if that makes sense. I often boil them for a little bit too long as I forget to turn the pot off as I am cooking other stuff and they end up quite soft, and it still turns out fine though - I just turn the heat on the oven up a little so they still crisp up.

Ok I put them in after the first couple of responses, so what I've done is pricked them all over with a fork and wraped them in greased foil. They are in with the vegies, at 180 degrees, for an hour and a half all up. about 45 mins to go.
Should I unwrap the foil for the last 30 mins or so?
I looove the smashed idea, and rosmary on spuds is always a hit, but tonight we just want to slice off the top and dump on heaps of sour cream/diced, spicy salami/chives etc. Mmmmm! :smiliedance:

Yum - I love chives on baked potato with sour cream!!
I wouldn't uncover them - the bottom of the potato will still go cripsy the way you are cooking them, and the potato won't dry out if you leave it in foil. The only thing I would suggest is opening up the foil about now and putting a dob of butter or margerine in, (not too much!), and wrapping them back up.
MMmmmmm - I want potatoes now!!
