Hi there lovelies.

I wanted to make a nice coconut cream vege curry tomorrow night.

What spices should i use, and have u got a lovely homemade recipe you could share.

Kiah, you'll love this one - the tomatoes make it really delish....

Vegetable Curry

200g cauliflower
8 small brussel sprouts
2 medium potatoes
1 medium carrot
2 tomatoes
1/2 white onion
1 clove garlic
1 tsp grated ginger
1 tbsp oil
1 dried chilli (or chilli flakes/paste)
pinch of salt
2 tsp curry powder
1 tsp cumin
1 cup coconut milk
1 cup water

Wash all vegetables, cut cauliflower into bite-size pieces, trim brussel sprouts, remove damaged leaves and put a cross in the base of each one.

Peel and dice potatoes and carrot.

Wash tomatoes and cut each into about 8 pieces.

Peel onion and garlic, dice onion, and chop garlic.

Heal oil in a hot wok and fry onion, garlic and ginger for a few minutes, taking care not to let it burn. Sitr in dried chilli, salt, curry and cumin and cook for 1 minute. Add tomatoes and stir-fry for 2 minutes before adding all remaining vegetables and coconut milk. Add a cup of water and cook, stirring occasionally, until the vegetables are tender.

This isn't exactly a curry, more of a curry soup. But I LOVE it and sooo easy, no exact measurements just chuck in what you like in the amounts you like. But roughly it's
1 Lge Eggplant
1 Sweetpotato
1/2 Pumpkin
2 Lge Potatoes
1 head garlic
2 White onions
Cut them into chunks and cook in oven about 200c for an hour then on same oven tray add
2 halved tomato's
1 halved apple
Cook another 1/2hr till everything has that nice roasted/browned look.
Chuck it all into a huge pan with about 1/2ltr vege stock, can of carnation light coconut milk, heaps of curry powder and tablespoon vegemite. Blend with blender and add more milk or stock as needed. Good to freeze too.
Trust me it is sooo yummy.

i do this with whatever veges i have around, and some lamb or chicken

fry 4 - 6 cloves garlic and 2 large onions in few spoons of ghee, add cumin, tumeric, coriander seeds, makes a yummy spicy paste.

add in meat if you like.then vege, brown up a bit. 1 tin tomatoes, 1 tin water, half a tin of cocunut cream...

then leave it to cook. 15 mins before serving add a tin of lentils, or butter beans, or chickpeas, and a few handfulsof baby spinach.

YUUUUUUUM!

Hey kiah, I usually cheat, I just use a ready made paste or tin sauce from the asian section of the spermarket, my favourite is 'singapore hot curry sauce' with a tin of low fat coconut cream, evry vege I have and just a plain firm tofu diced up is sooo good in it, it gives it a bit of a sweet flavour.
Definately potato, corriander and garlic, and just whatever else I find in the vege crisper, or garden.

come to mine for tea, this thread inspired me to do a lamb curry! Yum yum yum... just getting the naan ready now. ha ha ha

PS bring the wine....... or better still some beer!

Aww these recipes sound delish i dont know which one to pick.

I did get some eggplant today so i think i'll throw it in no matter what.

Maybe is will have to cut and paste and combine the whole lot. That's what i did last time when i aksed for a pumpkin soup recipe coz everyone's ideas were soooo yummmo.:thumbsup:

Well thats it hey. I luv getting little ideas from others and then kind of making it my own recipe.

I am gonna have chickpeas in it for sure.
