So, in my quest to be a super-organised, relaxed and prepared-for-anything-SAHM, I am learning how to whip up a few slices to keep in the freezer for visiting, visitors, mum's group etc.
Help me pleeeeaase!!
I only know a basic lemon slice recipie :o It's quick and easy, but frankly I am sick of it! I'm sure everyone else I see regularily is too :laughing:
What's your favourite slice to make and freeze? I'd love any recipies if you have a chance to type it out :D :yes:

My kids love this and it freezes really well.
Hope you enjoy.
RASPBERRY SLICES
Ingredients:
1/2 cup butter/marg
1/2 cup of sugar
2 med eggs
1 1/2 cups s/r flour
raspberry jam (to taste-little or a lot)
1/2 additional sugar
1 cup desiccated coconut
pinch salt
Method:
1. Cream butter and sugar together
2. Add 1 egg
3. Add sifted flour. Mix well
4. Spread thinly in flat well greased or lined 35 x 25 x 2cm swiss roll pan or similar.
5. Spread with raspberry jam.
6. Beat remaining egg and additional sugar together, add coconut.
7. Spread over jam.
8. Bake in moderate oven, 180-200c, for about 20 minutes or until lightly browned.
9. When cold cut into slices.
I then put it into sealy bags in lunch box/serving size in freezer. Keeps for about 3 months.
SIA I know there is lots of sugar in it, but it is so yummy with a cuppa.

I forgot to add you can replace raspberry jam with apricot jam or lemon butter. Enjoy:chef:

TBD, I've never frozen a slice :no: but my faves are caramel slice and I love making choc truffles (not a slice, but yummy anyway ;) )
CHOCOLATE TRUFFLES:
1 cup desiccated coconut
2 cups crushed bickies (arrowroot)
1 can condensed milk (400g)
2 tbspns sifted cocoa
extra coconut to roll the truffles in
Pour all the above ingredients into a large bowl, and combine (use hands to mix thoroughly). Roll into balls, then roll in extra coconut and put into container. Refrigerate for a couple of hours, then voila!
CARAMEL SLICE:
3/4 cup desiccated coconut
1 cup self-raising flour
1/2 cup caster sugar
125g butter, melted
Filling:
400g can condensed milk
30g butter, extra
2 tablespoons golden syrup
Topping:
150g dark chocolate, chopped 20g copha
Preheat oven to moderate 180 degrees celcius. Brush a shallow oblong cake tin with melted butter or oil. Cover base with baking paper, extending over 2 sides. Combine coconut, flour and sugar in a medium bowl; add butter, stir until well combined. Press into prepared cake tin. Bake for 15 minutes or until golden brown. To make filling; combine milk, extra butter and syrup in a medium pan, stir over medium heat until boiling. Lower heat, continue stirring for five minutes. Remove from heat, spread over base in tin. Bake for 10 minutes. Remove and cool. To make topping; Place chocolate and shortening in a medium heatproof bowl. Stand over pan of simmering water, stir until the chocolate has melted and is smooth. Spread evenly over the caramel filling and allow to set. Cut into squares using a warm knife.

Ok- my lemon slice recipie. Surely you all know this?!
MELT TOGETHER:
1/2 tin condensed milk
125gms/4oz butter
ADD TO:
1 pack of crushed marie biccies
Grated rind of 1 lemon
1 cup coconut
Press into slice container/tray and ice with lemon icing. I then sprinkle it with shavings of coconut.
Cool in fridge. Or slice up and freeze!

Hi there ..... recipe sounds great ..... how long does it keep in freezer ?
I've kept it there a couple of months and it's been fine :yes: That's in a seperate/stand alone freezer. I'd say 3 months would be my max, but it would come in handy long before then! :D
